We celebrated Thanksgiving twice this year. Knowing we would be out of town on actual Thanksgiving day, we did a Lubbock family dinner a little early. It was DELISH! We had the full traditional spread, plus some, and it was amazing. See here:

A very filling and cozy day indeed. For the calendar Thanksgiving week, we trotted off to Orlando, FL for some theme park, warm weather, swampy, family goodness. I was very pleased that the parks were decked out for Christmas, with music, fake snow, sparkly lights, and sea creatures everywhere we went.

We got to share Thanksgiving with a HUGE killer whale... you may have heard of Shamu?? Yes, well, he is beyond awesome to see in person... we saw the show a few times. One Christmas version, one not.

We filmed some of it on our phones, and I didn't edit it down so be patient until the end because the coolest jumps are there. Happy Thanksgiving!!!!

Denver in October

Cam had a few extra days off of school for fall break, so we decided to make the drive to Denver... Most importantly to meet this little love, Aimsley Mae:

She is amazing... well done, Porter & Michelle!!

We did as many fall friendly things as we could, including a corn maze:

"Scary" was also a theme of weekend... naturally, as Halloween comes ever closer. During our walk through corn, Cam and Porter REALLY got us good....

They ran out at as yelling "Children of the Corn!!!".... super "spooky scary." More like, grown adults of the corn.

One thing Lubbock lacks in mountainous terrain... sad. So we quite enjoyed walking around these trails for a while...

Aimsley is a natural mountain woman! Next step, wrestling bears and starting camp fires with her mind.

We enjoyed the quaint little town of Golden, and had a poto shoot with the street sign after filling up on pizza and salad.

We even woke up one morning to this:

It was a perfect fall weekend with our friends. Not much is better in my book than cool crisp days, chilly nights, sweatshirts and jackets, carmel apples, halloween candy, pumpkin baked goods, and other comfort foods- including Cafe Rio wich we rarley get anymore, movies, Autumn hikes and new baby Aimsley- oh, and the Foulgers of course. We were sad to have to leave.

Side note- we listened to The Unbroken there and back, which we highly recommend if you have yet to read it.

Anyways, good trip. Thanks Porter & Michelle for such a "spoooky scaaaary" time. We love you guys and Colorado.

There are quite a few pictures in this post, but I want you to have a well rounded impression of our trip to B.C.

First, love my family. So fun to be with... even though we missed Taylor. These people are awesome!

Brought in Dad's 55th with style. He proved to all of us yet again, no matter his age he will always be physically superior to all of us. The man's an athlete! Haven't had a birthday with my parents in a while, so it was a treat. Love you pops!

When Beckham learns to blow out instead of up, no candle will stand a chance :)

There was no shortage of the most beauitful scenery EVER!

Also , no shortage of wildlife!

I know this doesn't probably look that exciting, but it was quite the adrenaline rush for me!

We stayed active the whole time with:

in SEATTLE,

Ironing Board

Today Cam asked me very seriosuly, "Do you want to get an ironing board later?"

And I said, "Oh? Um, are you asking me on a date?"

"No, I just really want to go get a regular sized ironing board. Our's is too small and it hurts my back. I've been wanting one for a while."

"Ok... suuuuree? Did you have a place in mind?"

"Target."

And the plans were set.

On our way home he asked me if I was going to blog about it so that everyone could know that he got a new regular sized ironing board. I told him I would... for him.

So, this is that post.

Oh, how we've been missing mountains and everything they offer! Last Saturday we drove a few hours to "the Grand Canyon of Texas" to picnic and hike. While it was a very nice break from the flatness of Lubbock, I'd imagine Palo Duro canyon is even prettier during non-winter months.

We quite enjoyed being outside and exploring this part of Texas we've heard about.

Afterwards, we ate delicious mexican food in Amarillo, and then ate candy and sang all the 2 hours home. Feeling very thankful for Saturdays!

Valentine's Flowers

The Friday before Valentine's, I came home from work to a kitchen chair blocking my way through the door. What was special about that chair is that it had a pot of these sitting on it:

What is so much more exciting about festive candy?
Possibly, it's that I feel it is more easily justified.
Possibly, it's the seasonal colors that add to the ambiance.
Possibly, it's that it only comes around once a year.

Fortunately, we have the "Goblet of Fat" as we've taken to calling it
that sits so nicely next to our couches to offer us treats.

Christmas in Utah

We were able to go to Utah for christmas this year and spend a good amount of time with the families. My family all came in and we spent Christmas in St. George at my Grandma Ruth's. Then we went up to Salt Lake and had spent time with Cam's faminly and friends. I think I got soft in Texas, I was freezing! But we sure love our family and friends, and Christmas... So it was a perfect time. We are very blessed :)

Thanksgiving

We celebrated family thanksgivng last week when the Bowens flew in to Lubbock. We all cooked a rather delicious thanksgiving meal and vegged on the couch in sweats. Excellent day, really. So on the calendar's Thanksgivng, Cam and I (who are we kidding, just me) didn't want to cook, so we ate out at none-other, but the Golden Corral!! Knowing we were not going to take it easy on a buffet, plus it being the annual day where "gluttony becomes a patriotic duty," we started the day with a run:

All week it's been in the 70's, but on Thanksgiving the high was 40 (yes, I know you Utahn's were in the teens) but for running, it makes for some cold ears and noses. Here I am catching my breath while trying to get feeling back in my ears at the end of the run.

Then off to the Corral, yeeeehaw:

Good thing we got there a few hours before closing! sheesh... had no idea they would be this packed! We had to wait for an hour to get any food. Happenin' place, in case you were wondering.

We were stuffed to the brim. It actually was pretty good, and it doesn't hurt to be able to have a taste of everything. That is what I love about buffets... you can have a piece of this and a taste of that, cause sometimes thats how I roll.

Afterwards, we went straight to see Harry Potter 7 then came home and again vegged on the couch in sweats with the fire on. A very fun Thanksgiving!

Apple Orchard

We have been dyin for something fallish to do around here... well for anything to do around Lubbock, period. We heard about a pumpkin festival at an apple orchard 25 miles outside of town going on Saturday and decided we had better partake of this opportunity. Cam is pretty supportive of my over sensitive desires to be festive. There wasn't much in the way of pumpkins by the time we got there, but we picked some apples, tried raw honey with the bees, and browsed all the different apple butters and jams. We walked away with a gallon of fresh apple juice...ahhh... some black raspberry ram, and tummies plus a bag full of apples.

The Process:

It was a UTAH game day. Hence, Cam's shirt. I promise we wash it every week... it just seems like in most of our pictures recently, he is wearing it.

What are you gonna do with a bag full of apples? Make apple pie, of course.

I don't have a pie pan yet, so I had to use oven safe bowls. 'bout right for two people, I'd say. Now if it only felt and looked like fall weather here.

Soup Season & Some Spooky-ness

I love soups. I love making them, love the way they smell up the house, love the way they warm you up, love the amount of left-overs one pot makes for 2 people, and mostly I love eating them.

One of our favorites 'round this home is a minestrone recipe I got from my mom-in-law Deb. Since I made it the other day, it re-kindled our fondness of it and so I wanted to share it.

also made ghost shaped biscuts with it, because I quite enjoy any chance to make it feel like halloween and fall.

Minestrone Soup

1 lb. Italian Sausage
1 C diced onion
1 C sliced celery
1 C sliced carrots
2 cloves garlic, diced
1 (15 oz.) can Tomatoes
1 (15-16 oz.) can Tomato sauce
2 C. water
5 tsp. beef boullion
1 tsp. dried parsley flakes
1 tsp. salt
1/2 tsp. oregano
1/2 tsp. basil
1.4 tsp. pepper
{add at the end...}
1 (15 oz.) can red Kidney beans (undrained)
1/2 C elbow macaroni
1 C cut green beans
1 C sliced zuchini

In large pot, brown sausage. Add all ingredients EXCEPT beans, zuchini, and macaroni and Simmer for 20 mins. Add remaining ingredients, and let simmer until noodles are soft and cooked.

Also, if you are looking for super cheap halloween decorations, here are a few ideas. I got this first one (bat's in the lamp) from my sister Teigan, she's done it for a few years. And I have seen a few others, Martha Stewart has a how-to up about it also.

I used this as a template, re-sizing it once. Just cut out on black paper, and tape inside lamp. I don't have a normal lamp shade lamp, so I had to use the one above our kitchen table. Cam is so afraid of them:

I didn't want to waste all that black ink, so I actually traced the outline on a regular sheet of white paper, cut that out, then used it to cut out of black card stock. If you have anymore decorating ideas, I would love them... I can never have enough!

birthday camping to the MAXX, pepsi maxx

This weekend we went camping in honor of 3 birthdays: Cam's, mine, and Porter's. Since we moved to Lubbock, and the Foulgers moved to Denver, we found a spot pretty smack in the middle: Santa Fe, New Mexico. We met in town, then drove up into the national park and found a pretty good little site. we had some SERIOUS fun. It was a perfect good-bye summer, hello fall weekend too. Warm enough for t-shirt hikes up and down mountains (literally...) during the day, and cool and crisp enough for sweatshirts and crackling fires at night. LOVE THAT! We played lots of games, including boys vs. girls in sharades...wow. We each made up prompts for the other team and I got to act out a "a show-off giraffe who has to be center of attention", and also "viciously stabbing a cat sitting in my lap." Too bad you missed it. It really was a FIERESOME belated birthday celebration for Cam and I and a happy 29th to Mr. Porter. We love you Foulgies, and wish the rest of you could've joined us. Come on, everyone... let's GO!

for our birthdays this year, we moved OUT on Cam's and moved IN on mine :) Not the least frustrating way to spend any day, let a lone a birthday, but we still enjoyed some good treats.

key-lime pie is both our favorite, so I made one for cam, and we just ate it with forks straight out the pan. plates were already packed, you see. But that is what we wanted to do anyways :) If anyone needs a good recipe, the America's Test Kitchen Family Cookbook one is tried and true in my book. Let me know if you wanna try it.

2 years of marriage for us Bowens, and 3 years for the Foulgers. It was so fun to meet up with our besties in LA and set sail for the land of salsa and very pushy sales people. We ate, and then ate some more. coming home and then going to girl's camp a week later was not good for my summer slimming. memories to remember were made.

We love you porta and meesh, and Mexy... you're not too bad either.

cruisin' & choosin': Girl's Camp

This year I had the privledge of being our ward's young women girl's camp director. :) awesome, no? It was just last week, monday through friday, and we had a blast. we had the privledge of going to Heber Valley Camp, which is incredible... cabins with bunk beds, pavilions, bathrooms, a challenge course (complete with zip line), volleyball tournament, canoing, hiking, skits, games, camfire meals (we ate GOOD), and lots and lots and lots of candy and treats. Heber valley is beautiful. The missionaries there call it the "temple on the mountain" especially because the animals seem to feel the peace and safety. We ran into badger, moose, tons of little four legged feasters and many deer (complete with a sneezing deer who interrupetd a devotional). Our little group was the smallest there, but that makes us extra close. With lots of help from the girls and amazing leaders, we made it a great week. When they travel as far as Tokyo, (and Omaha) it's only worth it if you stay for a good while... still, it's never enough.

Way to go Lani... ya sistas couldn't be more proud to have another true aggie in the family.

Cam never walked, so Lani was kind enough to lend her outfit and dipoma for the good of the people... or just cam. Somehow, it made it feel legit. so, cheers to you to, my dear. Another true aggie in the family. (in the other sense of the word, I really did make him a real... true aggie. Not as cute of a story as you'd think)

And, celebrating mother's day with BOTH moms was a rare treat. (all the 2 mother's days we have had together, but still, I know this won't happen often)

we put together a book for mom-jo this time with memories showing a characterisitc of her that us daughters hope to have when we are moms... mine was: as a little one (and still has a bigger one) my imagination was grandiose.. and one night, I SWORE I saw a UFO fly over our house, twinkling lights and all. I bolted downstairs and took my mom out side with me to search the sky. She not only let me have my fun, but seemed just as invested to look everywhere for it. Her response to my pages, was "Well, who was I to tell you that you hadn't seen a UFO? maybe you did." someone who encourages imagination :) I love my family, Bowens and Scoffields.

anniversary

We are headed on a celebratory CRUISE BABY in June.. 7 nights with our lovers Porter and Michelle (their anniversary is one year earlier, but within the same week) So that will be an awesome event. but here we have a Last min. decision to head up to the homestead resort in midway, UT for some celebrating country style. Of course eating fried chicken, steak, mashed potatoes, and fudge were just some of the yummy delights to fit in with our "down-home" theme. Most of our pictures didn't turn out too well because, well... self-timer set-ups never turn out as perfectly as you'd hope. We did our best:

the "honeymoon suite" with a complimentary bunny rabbit to enjoy whilst staying here.

We couldn't not go on a hunt. What can I say, it's in my blood. annnnd, sure, I'm pretty good at it. I've got the "eye"... cam ain't too bad himself. :)

25 golf balls later, it was getting too dark to stay much longer. It was no Beau Chene, but it did alright by us.

It's not hard for us to have a good time.

This past year has been some old and lots of new. Bought our first HOME, became official home-owners, when saturdays turn in to work days. Travelled to Japan, Thailand, California (tahoe x 2, monterey, san fran... thanks foulgers), washington D.C., Virginia, Omaha, and fun places around Utah... am I forgetting any? Had some big scares... mom, glad you're ok! and some new entries into the big fam.... welcome Beckham and Merika!! Threw limitations and fears aside and started a new, promising, exciting business. Loved being with family and friends. What a 2nd year! Can't sum it up all here, because I'm sure the 3 of you who read this would be bored. This year, my goal is to take more pictures. I've been lazy, and I regret it.

So, Cheers Love... you've been good to us.

As most of you know, our mom had a heart attack 2 weeks ago... all the way over in Japan. There were ups and downs, some serious complications and scares for a time, but things seem to be looking up. So this is a video "Get Well" card to our JoJo. Growing up our mom would wake us up by saying, "Up and adam, adam ant!" (from an old cartoon she watched growing up starring a super hero ant.... that was his take-off cry...) So now it is our turn to say it back to her, as she has been asleep for a week. Jeez, lazy :) We mixed together some favorite family tunes, for that old familiar good time. She finally got to watch it for the first time today... and had to stop half way through because she was laughing so hard it hurt her heart too much. I guess it did what we wanted... made her smile. Although, the pain was neither intended or preferred. So Daughters orders, Mom, Don't watch until your heart can take it.

for our one year i got cam tickets to see brian regan down at tuacahn a few weeks ago. it was a blast! just watching him walk around and his facial expressions were enough.. he is so goofy you can't help but laugh! he's got some pretty good material too. in the car, before the show, we gave our best "brian regan faces" for the camera. what do you think?

we made a weekend out of our one year. Cam made the plans and booked a charming cabin type condo in Park City for 2 nights. It was full of going out to dinner, movies by the fire, hot tub on the back deck, and of course eating plenty of treats. we watched all of our different videos of getting engaged, wedding slideshow and i finally showed him the video i made that is posted below. I got cam tickets to see the comedian Brian Regan in St. George in 2 weeks, and I just got back from a one hour massage and one hour facial that cam got for me! I feel like butter. I have never been so moisturized and soft!! :)

Cam's days consist of sitting in a model unit of some condos, waiting for people to walk-in for information. Regardless of how bored he gets, he never leaves to go get food. Those of you who know cam understand, this isnt unusual... food is more of a necessity to him, and a bother.. unlike me, who can't wait until the next time i get to eat something. So being a nice wifey, i bring him lunch whenever I can to make sure he eats. The other week my mom was there to document this moment:

what a pretty day... foot of new snow, sunshine and blue skies! this is what rocks about Utah.
because I was trying to keep this evil chair from crushing my unexpecting father, I couldn't get my camera out quick enough to get a shot of the full extent of this situation. Picture him on his stomach, with the chair completely over his back and head!! "A perfect 10" we all applauded. It was a 20 second process of dad being dragged by the lift until finally it dominated and the lifty FINALLY shut this rogue machine off. With about 300 people watching, it was no minor incident. As dad stood up, dusting himself off, he loudly explained, "I'm from New Orleans!! I'm just a southerner!"
getting up and back on was not an easy task.
as always, couldn't get warm enough!

momma jo was in st. george for the week, and one of the perks of being unemployed is.. being able to leave town whenever you want! (as long as it's cheap) so we took a weekend trip down south to visit grandma Ruthie and my mom. I wish we didn't have to leave! I learned to make these hot pads! (pictured above) Grandma makes about 500 every christmas, so I figured I tried to tap into the McIntire talent of sewing. as you can tell, I am a natural... :)

THRILLER! friday night... always a spooky time :) Cam and I have seen it a hand-ful of times, but this was Jo Jo's first. Cam and I would watch her during the parts we thought might startle her.. and she she stayed pretty composed! (although she said it got her heart racing a few times)

we had some fun with the living and dead this weekend. and gained about 100 lbs. due to key lime, sour cream lemon, and chocolate pie for breakfast, lunch and dinner, oodles of homemade carmel corn, and mom's constant purse stash of peanut m&m's. I LOVE OCTOBER!!!

ya win some, ya lose some... and we WON some!! :) Thanks to APX Alarm's outrageous end of year party, cam walked... or rode... away from the party on a brand new full suspension Trek mountain bike! 50 people out of the 6,000+ got one and cam's little bum was lucky to find a new friend to sit on as he rides around in style. I was 3 numbers off from getting one myself, but Cam def. is the one who deserves it more. The bike he has been ridin' is too small for me, due to the fact he's had it since he was around 13. His smile didn't fade all night. and he made sure to say hi and bye to it whenever we've left it alone for a time. We also walked away with some extra cash our office won during "Apx deal or no deal"... enough even that at dinner cam exclaimed..."let's celebrate and splurge!" so we split Chili's steak and chicken fajitas with a side half rack of ribs... :) HIGH ROLLAS!! almost too much celebration for us to handle. almost.

favorite time of the year! We've already started enjoying hot chocolate, pumkin muffins, carmel apples, fire places, hoodies and the smells of cold crisp mountain air! for those of you missing Utah's awesome fall season, here is a sight for longing eyes... :) All of my fall/winter clothes are packed in doug and deb's basement, but that is my only complaint about the changes!!

Kelly and Jo got us tickets for Sunday afternoon! It's always a treat to be in the conference center. We ran into some good friends ( the carvers from virginia) who I havnt seen in a long time! also we spent about and hour afterwards catching up with kim and leslie mclea from houston... loved it! Then alaina came home with us to a wonder surf- and-turf meal from debbie, with homemade peach cobbler and vanilla ice cream to top it off. mmmm, love sundays!

In August we have Teigan's on the 15th, Trav (cori's hubby) on the 16th, Cam and Cori's on the 18th, mine on the 24th, and out nephew Dax on the 26. Even more cousins and grandparents to call too! Cam is 27!! his friends cam and travis suprised him with a SHOT GUN! well... the money for one because we are gonna wait until we get back to Utah, but finally!! they gave me charge over the money so that cam has to get one. Not that he doesn't want one real bad, but he has been given opportunities to get a gun before and always ends up saving the money. So this time it's not up to him! We had some friends over for surprise cake and ice cream, after cam and i had ribs and steak at texas road house. His birthday was filled with waffles, jamba juice, cupcakes from scratch, steak, ribs, rolls, and more treats. We hadnt eaten desserts for 4 weeks! so we celebrated big time! Cam kinda had a little "I am SO OLD moment" because he didnt want to go sky-diving... so we sat around listing "crazy" things he would still do at his old age of 27... and I think it worked! he enjoyed the rest of his day :)

Here is some pictures from the limited non-apx related activities we've gotten to do down here. Hurricane Rita made for some exciting waves and skim-boarding at the beach. it's not usually that exciting! Being this close to the famous King Ranch, and being a Scoffield... we had to go check it out. That is the picture of the longhorn. beauty ain't it? an hour and a half of cattle and quarter horses and we can say we've been there! score some points with the grandparents ;) the last picture is of a mixer I helped put on for my internship. Cam came with me and was the only person i knew besides my co-workers... we stole away for a few min to the coast, and drank our cranberry juice and crackers. I finished my last day there yesterday... HOME IS SO CLOSE!!!!!! we can't wait.

we sure love independence 'round here. we made holiday cupcakes from scratch and they were sure delicious! this picture is of Cam getting ready to carry them around our complex giving out holiday cheer to friends and those we passed. mostly just to our friends here though. you had to sing the Star Spangled Banner before you could take a bite though. we enjoyed some American food: american cheese burgers, fries, and classic cokes.... then hit the beach for some fire works. they shot them off a huge boat in the ocean. not bad at all!

we are in corpus christi, texas now by the way!! been here almost 2 weeks... and we are making the best of it. apx is still goin strong, but i no longer have a job or family near-by. it was sure sad having to leave! we got 24 hours heads up... crazy. i had a nice little set up in louisiana, but only about 6 weeks left here, so who wants to hire me?? i've found an internship with a video editing company that i start next week. hopefully i learn how to get started in all that. mmmmhmmm

One fun thing about being married to cam is never knowing which words were his last ones before crashing into sleep. working 70 hours a week really takes its toll on him. Last night was his turn to say the prayer, and i waited patiently for about 40 seconds until i woke him back up, so that i could be positive he was indeed sleeping and not thinking really hard about what to say next. this is not a rare happening... in fact just the opposite....and my favorite is when we are mid-conversation. while i talk he falls asleep... for about 2 mins then startles me with "i'm sorry i really am interested in what you...." only to trail off again! 2 mins later i will be startled again with some started off loud, then trailed in to a mumble, out-of-context half sentence to our previous conversation. he always falls asleep first. but there is something to be said for the mornings... he wakes up about as quickly as he falls asleep.... and i wake up about as slowly as i fall asleep... actaully, probably slower. So i guess we are even... as much as i don't like how quickly he falls asleep... he hates how slowly i wake up!!

the week after the wedding was spent driving in ol blue up there (seen with cam and a flat tire).. with NO air-conditioning I might add. With the windows down the whole way in attempts not to burn to death, it was hard to hear music or conversation, but we had fun on the way ! we spent some time in santa fe and dallas. rippley's believe it or not was a big hit... can you believe this is the actual height of this guy? we're looking forward to another 30 hour road trip here in a few months, and our vacation honeymoon in september.

Oh the joys of living in the office. Welcome to #113 ... where all your dreams come true. We left most of our stuff in Utah for the summer, so there is not much we can do with it because Cam & I get one bedroom and the kitchen for the select things we did bring, and we share this apartment with all the other employees for most hours of the day.
